The byte count is the size of your text encoded as UTF-8, which is what most files and forms use. ASCII letters take 1 byte each, but characters like accented letters, emoji, or CJK characters take 2 to 4 bytes, so the byte total can be larger than the character count.

Characters counts everything you typed including spaces, tabs, and line breaks, while characters without spaces excludes those whitespace characters. Use the without-spaces figure when a limit ignores spaces, and the full character count when every keystroke counts.
